An energetic, structurally focused Italian sparkling wine demonstrating the complex characteristics of a high-end, bone-dry appellation. Vinified strictly under the prestigious D.O.C.G. standards, this cuvée shifts past simple sparkling formats. The extra brut style yields a highly integrated framework marked by a persistent, fine bead, deep mineral focus, and profound gastronomic adaptability. 

Organoleptic Profile

Appearance: Bright straw-yellow with subtle greenish reflections and a highly persistent, exceptionally fine perlage. 


Nose: Clean and highly dynamic, characterized by initial aromas of vibrant citrus fruit, under-ripe white-skinned orchard fruit, pear, and crisp white flowers. 


Palate: Soft, balanced, and confidently dry with a very low residual sugar content of 3 g/l. The mouthfeel reveals a striking, sweeping mineral freshness and clean acidity, culminating in a pristine, precise finish.

Vinification: Temperature-controlled primary fermentation followed by secondary fermentation according to the Martinotti-Charmat method for a period of 2 to 3 months to cultivate refined effervescence and sharp aromatic preservation

Accords: Kumamoto oysters with finger lime caviars, razor clam ceviche, bluefin tuna tartare with bone marrow toast, crispy fritto misto with sea-buckthorn aioli, carnaroli risotto bianco, white truffle risotto, A5 Wagyu beef carpaccio with shaved truffles, milk-fed veal tartare, wood-fired Chilean sea bass, pan-seared jumbo lump crab cakes, butter-poached lobster tails, and creamy burrata.
